Vanilla Cupcake Smoothie Bowl

Time for another delicious superfood smoothie bowl! This one is what I call a vanilla cupcake smoothie bowl. I’m obsessed with these this summer and this vanilla cupcake smoothie bowl tastes better than a cupcake and just like ice cream!! Sure, I love some good ice cream as much as the next gal, but I’m not going to eat it every single day. This smoothie bowl, you can literally eat every day if you want with no guilt.

I love adding toppings to this, and the fat from the almonds and fiber from the fruit and oats keeps you fuller longer. Change up the toppings and make it interesting. I also love adding chia seeds. They remind me of sprinkles and I love mixing them into my smoothie bowls.

I make a smoothie almost every day, so I opted to get a single-serve blender. I highly recommend doing this if you make smoothies or protein shakes a lot. You just add a lid and go! I have the Nutri Ninja and love it. It blends ice, frozen fruit- you name it! (linked below)

Ingredients

3/4 cup unsweetened almond milk
1/4 frozen banana
1 cup ice
1 scoop vanilla protein powder (I use shakeology)
1/2 tsp honey
1/2 cup blueberries
1 Tbsp slivered almonds
1 Tbsp old fashioned oats

Directions

  1. Blend almond milk, frozen banana, ice, protein powder, and honey in a blender until smooth like ice cream.
  2. Pour into a medium bowl and top with blueberries, almonds, and oats

Enjoy! Yup, it’s that easy. The frozen banana really thickens up the smoothie bowl. I always freeze bananas when they are getting overripe. They are perfect for adding to smoothies. I also love adding the blueberries frozen/slightly thawed to these bowls and then mixing it all together. That way you get a vanilla cupcake covered blueberry.
