Sweet Potato Toast Bowl

Sweet potatoes are a super versatile food. Bake, roast, air-fry, and now toast it! They’re packed full of fiber to help keep you full and satisfied. Eat them in this sweet potato toast bowl for a meal complete with protein, fiber-filled carbs, and fat. I love this meal for breakfast or a mid-morning snack. Spread the yogurt and peanut butter on the sweet potato toast or dip it in for a treat!

Sweet potatoes are full of vitamin C and vitamin B6, as well as a good source of potassium and magnesium. As I mentioned before they’re full of fiber. So not only are you fueling your body and mind but fiber helps you maintain a healthy weight. The greek yogurt is full of protein. I used non-fat Oikos greek yogurt which packs 15g of protein per serving. Strawberries and blueberries are full of nutrients and rich in antioxidants. I used frozen blueberries to add some flavor to the greek yogurt. Add the peanut butter, which is full of healthy fat and protein and you have a delicious and savory meal!

How to Make It

To make the sweet potato toast, I sliced it into about 1/3″ pieces, baked it in the oven for twenty minutes (making sure to flip halfway), and stored it in the fridge overnight. I popped the sweet potatoes in the toaster oven the next morning to warm them up and give them that toasted look and taste. Combine the sweet potatoes with the other ingredients. Enjoy! Sweeten the yogurt with a scoop or two of pure stevia leaf extract.

Ingredients

  • 1 sweet potato (medium)
  • 3/4 cup plain greek yogurt optional stevia leaf extract
  • 1/2-1 tbsp peanut butter
  • 1 cup strawberries and blueberries

Instructions

  • Preheat the oven to 400F.
  • Slice the sweet potato length-wise into 1/3" pieces.
  • Place on a cookie sheet and cook for 20 minutes, flipping halfway through.
  • Place two sweet potato pieces in the toaster oven for 1 cycle.
  • Combine sweet potato, greek yogurt, berries and strawberries, and peanut butter.
