Spicy Baked Kale Chips

Kale can be scary!  Say ‘kale’ and people run away.  I’m not a big fan or raw kale, especially on its own. But baking or sauteing it with a little seasoning can do wonders. These spicy baked kale chips are crispy and took away my potato chip cravings.  Kale is packed with vitamins like calcium, vitamin A, folate, vitamin K, and vitamin C.  Plus it has protein and fiber to keep you full.  They are super easy to make and healthy, what could be better? You can make a lot of different variations of them.  From just a little olive oil and sea salt, to parmesan, to spicy. I love spicy foods, so I decided to spice things up in this one.

Ingredients

2.5 cups kale leaves
1 tsp extra virgin olive oil
1/2 tsp chili powder
1/2 tsp cumin
1/4 tsp paprika
Himalayan Sea Salt (a few twists)
Crushed Red Pepper Seasoning

Directions

  1. Preheat oven to 275F and line a large baking sheet with aluminum foil.
  2. Place kale in a bowl, and add the olive oil, chili powder, cumin,paprika and Himalayan sea salt.
  3. Mix with hands until coated.
  4. Place kale in a single layer on a baking sheet and sprinkle with crushed red pepper
  5. Bake for 15 minutes then turn and bake for about 7 more minutes.
