Veggie Omelet

Who doesn’t L-O-V-E breakfast for dinner!?  Especially eggs.  Eggs are quick and easy to whip up and full of protein to leave you feeling full so you don’t give into those late night cravings.  This was my breakfast for dinner but would also make a great breakfast and is whipped up in less than 5 minutes.

For the 21 Day Fix this is 1 red, and 1 1/2 green!


Ingredients:
1 egg
1/2 cup egg whites
1 cup raw spinach loosely packed
1/2 cup mixed chopped tomato, onion, and mushrooms (equal parts) 
Non-Stick Olive Oil Spray
Preparation:
1.  Spray a cooking pan with extra virgin olive oil non-stick spray and turn heat the to medium.
2.  Add vegetables and sauté until spinach wilts.
3.  In a bowl, add the egg and egg whites and mix.
4.  Pour the egg mixture over the veggies and cook until the sides of the egg can be easily lifted (about 2 minutes).
5.  Fold the egg in half onto itself and cook for another 30 seconds.
6.  Flip the omelet and cook on the other side for 30 seconds.
7.  Enjoy!
