Copycat Starbucks Egg Bites

These copycat Starbucks egg bites are delicious and are perfect for any day of the week. Egg Bites are packed full of protein and perfect for a quick breakfast or snack. You can use any veggies you like, I prefer to add spinach and red peppers. One of Starbucks’s most popular egg bites is the egg white and roasted red pepper. I used a mixture of whole eggs and egg white here as I like to include some yolk. The egg yolk contains iron, folate, and vitamins, so I usually eat one egg and egg whites when I make a scramble or omelet. The egg whites contain most of the protein to help keep you full for hours. If you prefer egg whites only just replace the 3 eggs with another 3/4 cup egg whites.

  • Spinach and Red Onion

All you need to make these is a muffin tin and your oven. I love taking these on the go in the mornings or storing them to pop in the microwave for a quick snack. I love pairing these with sweet potato or oatmeal for breakfast to start my day off right. Sweet potatoes and oatmeal are packed full of energizing complex carbs which makes these the perfect addition to this protein-filled breakfast. Ingredients

  • Olive Oil Spray
  • 3 Eggs
  • 3/4 cup Egg Whites
  • 1 cup Spinach, chopped
  • 1/2 Red Pepper, chopped

Instructions

  • Preheat oven to 375.
  • Spray muffin tin (6 muffins) with evoo non-stick spray.
  • Place eggs and egg whites in a large bowl and whisk.
  • Add spinach, and red pepper to the muffin tins.
  • Pour egg mixture evenly over 6 cups.
  • Bake for 20 minutes.
