Balsamic Chicken

Here is a quick and easy chicken recipe!  One serving is 1 red, 1 yellow, 1 tsp, and 1 green for the 21 Day Fix!
Balsamic
Chicken (4 servings):
4 boneless skinless chicken breasts
1/2 tsp sea salt
1/2 tsp pepper
1 package button mushrooms washed patted dry and sliced
3 tsp, minced bottled garlic
1/4 cup balsamic vinegar
3/4 cup low sodium chicken broth
1 bay leaf
1/4 tsp dried thyme
cooking spray
Directions
1. Spray non stick skillet with cooking spray and heat to medium
high.
2. Add the chicken and saute until brown on one side. Add garlic and
flip over chicken breasts and add mushrooms. Continue cooking while stirring
mushrooms.
3. Cook for about 3 minutes then add vinegar, broth, bay leaf, and
thyme.
4. Cover and simmer over medium low heat for 10 minutes, stirring
occasionally.
5. Remove chicken, set aside and keep warm.
.   6. Continue simmering sauce, uncovered for about 7 minutes.
    7. Discard bay leaf and pour mixture over chicken and serve.
Sweet potato fries:
1. Cut up 4 sweet
potatoes into slices and put a small amount (no more than 4 tsp) extra virgin
olive oil on cooking sheet and stir to coat.
2. Add oregano and
bake until crispy on 350 degrees.
Steam 4 cups of Broccoli.
