Pico De Galo Salsa

I love fresh salsa in the summer!  Fresh salsa is full of veggies and when paired with whole grain tortilla chips, other veggies (I like dipping cucumber and celery in salsa!), or topped on a sandwich, salad, or potato can make a healthy and delicious snack or meal!

I made the Homemade Salsa from the Fixate Cookbook and just added a couple little twists!

Ingredients:
1 medium jalapeno, seeds removed
2 large tomatoes finely chopped
1/2 tsp pink Himalayan sea salt
3 gloves of garlic, finely chopped
1 small sweet onion, finely chopped
1 bunch of fresh cilantro leaves, finely chopped (about 1/2 cup)
1/2  lime
Directions:
1. Combine jalapeno, tomatoes and salt in medium bowl and mix well.
2.  Add garlic, onion, and cilantro, and mix well.
3.  Sprinkle with lime juice and mix.
Enjoy!

    What is the serving size for this? And would hold up well during canning. I would like to put some back.

      Servings Size is 2 Tbsp (like other salsa) and 10 calories. I haven’t tried canning it but I don’t see why not!
