Chilli Lime Shrimp Quinoa

Quinoa is the ultimate superfood.  It’s packed full of protein, fiber, and vitamins. Quinoa can be used in so many dishes from breakfast bowls to dinner, and it’s easy to have it take on the flavor or what you add to it.  I combined a recipe I used on tofu on these shrimp and veggies and made Chilli Lime Shrimp Quinoa. It’s pretty easy to make and the flavors are amazing.

The lime, garlic, and chilli powder combined bring out such a unique flavor, so let’s dive in. This recipe makes 4 servings.
