Kale Chips

Kale is a powerhouse food packed with antioxidants and tons of vitamins like calcium, vitamin A, folate, vitamin K, vitamin C , should I go on?  Did you know kale actually has more vitamin C than an orange and get this one- more calcium than a carton of milk!?

Some people are turned off by the taste of raw kale though and aren’t ready to dive into a kale salad.  So a great way to start is with kale chips!  I made chili lime kale chips but you can keep it simple and just use olive oil and salt!

For the 21 Day Fix each serving is 1 Green and 1/2 tsp.

 

Ingredients (Makes 3 servings)
6 large stems of kale, rinsed and dried
1/2 Tbsp extra virgin olive oil
A few twists of Pink Himalayan Sea Salt
For the Chili Lime Version:
1 tsp chili powder
Juice of 1 lime
Directions:
1. Preheat oven to 300F. Line a cookie sheet with parchment paper and spray with nonstick spray.
2.  Break off the kale from the stems into chip sized pieces and place on cookie sheet in a single layer.
3.  Drizzle with oil and a few (3) twists of salt.  If using the chili lime version also sprinkle the tsp of chili powder and lime.
4.  Using your hands, rub the oil,salt, chili powder, and lime juice to completely coat the kale.
5.  Make sure kale is in a single layer and bake for 20-30 minutes (depending on the size of your kale chips).
