Pumpkin Pancakes

It’s that time of the year…time for pumpkin everything!  Pumpkin spiced coffee, pumpkin smoothies, pumpkin beer, and Pumpkin Pancakes!  This is a great fall breakfast (or dinner:)) recipe! The best part is, these are 100% clean eating approved.  These are flour free and contain only natural ingredients.  I love pumpkin everything and this was a delicious recipe that I couldn’t believe I had gone so long without!
This recipe makes 2 servings!
Ingredients:
6 egg whites
1/4 cup canned pure pumpkin
1/2 cup cottage cheese (1%)
1 tsp. pure vanilla extract
1 cup whole rolled oats
Pure Maple Syrup
1.  Place all ingredients in blender (besides syrup) and blend until smooth.
2.  Heat a  skillet on medium heat and spray with non-stick cooking spray
3.  Pour batter onto skillet in four equal sized circles.  Cook until bubble start to form on the surface and then flip.
4.  Cook for about 1-2 minutes on the other side.
This should make about 4 pancakes!  Top with pure maple syrup and enjoy!
