Easy Baked Sweet Potatoes

Sweet potatoes are a fiber powerhouse which is a benefit to this starchy carb as you will stay fuller longer.   They are also full of iron, calcium, selenium, and beta-carotene.  Not to mention they turn deliciously juicy when baked and need little added to them to bring out the flavor.

They are simple to cook and my favorite way is baked in the oven (though you can microwave a sweet potato in 5 minutes if you are in a rush!)

I made these for Thanksgiving and even bought part of them pre-chopped (thanks Trader Joes!) . So that is another easy time saver if you don’t have time for chopping or simply don’t want to!  Feel free to sprinkle with cinnamon for a sweeter taste or even mix in some pecans for a real festive treat! This recipe makes 10 servings (1/2 cup).

Ingredients

5 large sweet potatoes, chopped
1/4 cup extra virgin olive oil
1 tsp Pink Himalayan Sea Salt

Directions

  1. Preheat oven to 400F.
  2. Toss potatoes with extra virgin olive oil and salt in a large bowl.
  3. Spray a cookie sheet (or line with aluminum foil) with extra virgin olive oil.
  4. Spread potatoes evenly in one layer
  5. Bake 35-35 minutes, turning potatoes halfway through.
  6. Let cool 5 minutes and enjoy!
