Pumpkin Protein Bars

In honor of wanting pumpkin everything and looking up tons of recipes-  I made these pumpkin protein bars!  They are healthy and easy to whip up!  I’m always looking or on the go snacks, so these are perfect!
Ingredients:
1 cup canned pure pumpkin
1 cup applesauce, unsweetened
1/2 cup egg whites
1/4 cup puremaple syrup or honey
1 tsp pure vanilla extract
2 + 1/2 tsp pumpkin pie spice
1 tsp baking powder, aluminum free
1/2 tsp baking soda- All natural, not chemically processed!  I like this kind.
3/4 cup vanilla Shakeology (2 packets) or a vanilla plant-based protein powder
1 + 1/2 cup quick or old fashioned rolled oats (use certified gluten free oats for GF version)
1/2 cup walnuts, coarsely chopped
Cooking spray
Directions
1.  Preheat oven to 375 degrees F, line 8 x 8 square baking dish with wax  paper and spray with nonstick spray. n a medium mixing bowl, mix canned pumpkin, applesauce, egg whites, maple syrup, vanilla extract, pumpkin pie spice, baking powder, baking soda and protein powder.
2.  Add oats and walnuts, and stir. Pour into baking dish and level.  Bake for 35 minutes or until fork comes out clean!
3.  Remove from the oven, let cool for 15 minutes.  Remove from baking dish (with was paper and let cool another 30 minutes).
4. Makes 10 bars. (~150 calories each)
Storage Instructions: Refrigerate in an airtight container for up to 1 week or freeze.
