Peanut Butter Chocolate Overnight Oats
One of my FAVORITE foods to eat is Oatmeal! Ok, and chocolate and peanut butter are two of the others. So peanut butter chocolate oatmeal is one of my favorites to eat! I eat oatmeal almost every day and the best part about it is you don’t even have to spend those 5-10 minutes cooking it! Overnight Oats are one of my favorite discoveries and I make enough for the week, store it in a mason jar, and dish it out to eat it. Peanut butter chocolate overnight oats just might be my favorite oatmeal recipe ever.
Oatmeal is full of fiber and can also help with digestion. They are also loaded with other vitamins and nutrients like manganese, phosphorus, magnesium, and copper.
Because of this, oats are filling and will keep you full for hours- especially when you add healthy fat or protein to it. (We are adding peanut butter here which has both).
I used Old Fashioned Oats this time but you CAN use steel cut oats as well (see recipe adjustments below). Either one is amazing!
Ingredients (Makes 4, 1/2 cup servings, or about 3 2/3 cup servings)
*1 1/2 cups old fashioned oats (if using steel cut use 3/4 cup)
*3/4 cup unsweetened almond milk and 3/4 cup water (or any mixture of the two totaling 1 1/2 cups) If using steel cut oats make the total liquid 3/4 cup
*1-2 Tbsp natural peanut butter (Smucker’s natural is amazing!)
*3 tsp honey
*3 Tbsp unsweetened cocoa powder
Directions:
- Add oats to a medium bowl.
- Add the unsweetened almond milk, and mix well.
- Add the unsweetened cocoa powder and honey. Stir until well mixed.
- You can either mix in the peanut butter or save for topping. I mixed it in here.
- Store in a Mason Jar. Enjoy these peanut butter chocolate overnight oats.

Does it matter if I don’t own/use mason jar for storing in fridge?? Would any other covered container work? Any reason it should be glass? Just checking!!

Do you then heat it or eat it cold?

Hey Jez! You can eat it either hot or cold. I like it cold but if you prefer it warm, you can just heat it up!

What is the Carb count on this? Wanting to use this as a recipe for gestational diabetes, and I have to carb count.
