Juicy Chicken with Zucchini and Rice

I found this juicy chicken recipe and decided to try it with a few modifications!  I love that it uses only one pan, is quick and simple, and gives a healthy serving of protein and veggies.  We are always looking to change things up and try new recipes, and this did the trick!  I also made the seasoning and put it on shrimp, and it was just as delicious!  I added in the rice to complete the meal.

Of course, if you are on a special diet (keto, low carb, etc.), you can always stick with just the chicken and veggies or maybe add a side salad!

Ingredients (4-5 servings)

1.5 lb thin sliced chicken breast
3 medium zucchini, cut into quarters
1/2 red or white onion, sliced
6 cloves of garlic, diced
1/2 Tbsp Chilli Powder
1 tsp cumin powder
1/2 tsp onion powder
2 Tbsp low sodium chicken stock
2 Tbsp lemon juice
2 Tbsp Extra Virgin Olive Oil
2 Tbsp Cilantro
2 Cups Cooked Brown Rice
2 Tbsp Lime Juice
Himalayan Sea Salt (to taste)

Directions

  1. In a small bowl, combine chili powder, cumin, chicken stock, 2/3’s of the garlic, lemon juice, and extra virgin olive oil.
  2. Place chicken in a glass dish and coat with the marinade.  Allow to marinate for about 20-30 minutes. (Save remaining marinade for later).
  3. Heat over medium heat, non-stick skillet on stove top.  Place chicken in, cook for about 8 minutes, flip chicken and cook for another 8 minutes.
  4. Remove chicken and then add the zucchini and onion to the sampan.  Sauté zucchini for about 5 minutes.  Add the remaining marinade and cook for another 5 minutes.
  5. Once the brown rice is cooked and cooled, add the remaining garlic, cilantro and lime juice.  Add salt to taste.  Here is the full recipe for the cilantro lime brown rice.
  6. Divide up evenly (should make about 4 servings), and Enjoy!
