Healthy Chicken Parmesan
Chicken Parmesan is a classic dinner dish. Yes, I am still a vegetarian but I love putting healthy twists on recipes, and Eric was wanting something new. So we decided to try out healthy chicken parmesan! Wow, I must say it looks and smells amazing. I am going to try this recipe with Eggplant next.
So this is pretty easy to make, healthy, and it is even breaded!
Ingredients (4 medium chicken breasts, or 3 larger chicken breasts)
4 raw skinless, boneless chicken breasts
1/2 tsp onion powder
1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp oregano leaves
1/2 tsp baking powder (aluminum free)
1 Tbsp cornmeal
1/4 cup coconut or almond flour
2 Tbsp grated parmesan cheese
1/2 cup nonfat or low fat milk (or almond milk)
1 large egg white
3/4 cup natural tomato sauce
3 Tbsp shredded mozzarella cheese
Directions
- Preheat Oven to 425F
- Add the cornmeal, onion powder, paprika, garlic powder, oregano, baking powder, almond/coconut flower, and 2 Tbsp parmesans cheese to the mixture. Place in a shallow dish and mix well.
- Combine milk and egg white in a shallow dish, whisk to blend.
- Dip each chicken breast into the milk mixture and then into the pine nut mixture until evenly coated.
- Heat a large nonstick, ovenproof skillet on medium-high heat.
- Add chicken breasts and cook for 3-4 minutes. Turn chicken over
- Place skillet in over for 10 minutes.
- Remove chicken from oven. Reduce heat to 350F.
- Place chicken in a shallow baking dish. Cover with tomato sauce and cheese.
- Bake for 8-10 more minutes until cheese is bubbly and chicken is cooked.
Enjoy with a side of veggies!! This would be great with some Zoodles or spaghetti squash!
