Quick and Easy Guacamole Recipe

Guacamole makes a great dip and is an appetizer favorite.  And why not?! With this easy guacamole recipe you’ll be able to whip it up in no time!

Guacamole is sure to satisfy everyone since it’s made mostly from avocados.  Some people steer clear of avocados because they are high in fat- but it’s one of the good kinds (monosaturated!)  Healthy fats, like those in avocado, are the types of fat you want to include in your diet and eat on a regular basis.  That healthy fat will also help keep you full.

Avocados are also full of vitamin K,vitamin E, the B vitamins, potassium and fiber. There are tons of ways you can eat guacamole.  I like topping my homemade chipotle with guacamole or enjoying with fresh veggies or whole grain crackers or tortillas.  Just watch not to over do it on the crackers/tortillas!  I’ve seen a salmon topped with guacamole recipe I need to try next.

Ingredients:

2 ripe avocados, pits removed
1/2 large tomato
1/2 large onion
2 cloves of garlic
Juice of 1 lime
2 Tbsp cilantro, chopped

Directions

  1.  Scoop the avocados out into a medium bowl and mash until smooth.  Or if you are lazy like me, stick them in the food processor and mix.
  2. Chop tomatoes, onion, garlic, and cilantro and stir into avocado.
  3. Mix in juice of 1 lime and a couple twists of Himalayan sea salt.
