Breakfast Power Bowl

Power bowls are all the rage- and for a good reason! They generally contain a good combination of all your macronutrients and are designed to keep you full and keep your energy up. What better way to start your day than with a breakfast power bowl?

My favorite power bowls start with:

  • A veggie base: kale, spinach, zoodles, etc
  • Have a serving of fiber-filled carbs: sweet potato, quinoa, brown rice, chickpeas, black beans
  • A serving of protein: eggs, fish, chicken, turkey, or if you are vegetarian or vegan you can sub beans in here
  • Healthy fats: avocado, hummus, nuts, seeds, oil-based dressing
  • Healthy extras: more veggies, seasonings, hot sauce, etc.

I call this the breakfast power bowl, but you can enjoy it for any meal (I ate it for lunch today). It was super easy to make and filling.

Poaching eggs is something I never did until a couple of years ago. I love the texture and how you can make them on the stove or in the microwave. I prefer to boil water and drop the eggs in to poach them (the how-to is in the recipe below) but when I’m in a rush microwaving is my go-to! All you need is a mug, water, and the egg. Simply pour 1/2 cup of water in a microwave-safe mug, crack the egg, and drop it in the water (make sure no shells get in). Microwave for about 30 seconds and then use a spoon to remove the egg. Easy as that!

Ingredients

  • 2 eggs
  • 1 cup kale
  • 1/4 cup slice red pepper
  • 1/4 cup mushrooms
  • 2 Tbsp chopped red onion
  • 1/2 medium sweet potato
  • 1/4 avocado
  • Chilli Powder
  • Onion Powder
  • Trader Joe's Everything But the Bagel Seasoning
  • Vinegar
  • Hot Sauce (optional)

Instructions

  • To poach eggs: In a small saucepan, heat water to a boil (enough water to cover entire egg).
  • While water is heating, cook the sweet potato. My favorite way is roasting them in the oven; however, I was impatient today, so I just poked with a fork, wrapped in a paper towel and microwaved for about 3 minutes.
  • Heat a medium pan on the stove- spray with EVOO if not nonstick.
  • Add the kale, red peppers, onion, and mushrooms. Add chilli powder and onion powder to taste. Cook about 6-8 minutes until vegetables are roasted.
  • Once the water is boiling, add a splash of vinegar. Crack one egg and slide into the boiling water. Cook for about 3-4 minutes. Remove and repeat with the second egg.
  • Slice the avocado and the sweet potato into bite-sized chunks.
  • Once veggies are done cooking, add to a medium bowl. Top with sweet potato, the poached eggs, and avocado.
  • Sprinkle everything with the Everything But The Bagel seasoning. Add some hot sauce if you wish! Enjoy!
