Mediterranean Tilapia Recipe with Balsamic Salad

I have been loving baking fish and am always looking for new and different healthy seasonings and sauces to flavor it with!  This is one of my absolute favorites – Mediterranean  Tilapia Recipe (with balsamic salad as a side).  The Mediterranean seasoning recipe I use is the 21 day fix recipe as well (yes, I used ALOT of it below – but it’s just so good!)  The recipes are below : )This counts as 1 red and 2 green containers on the 21 Day Fix.

 

 

Mediterranean Seasoning

4 Tbsp dried parsley, crushed
4 tsp dried onion flakes
2 tsp dried basil, crushed
1 tsp ground oregano
1 tsp ground thyme
1 tsp garlic powder
1 tsp sea salt ( I used Himalayan Pink Salt)
1/4 tsp ground black pepper
Mix all spices together!  It’s as simple as that and this makes a decent amount which is good because it’s so YUMMY (and I can use it on everything!)

Tilapia

1) Thaw tilapia filets completely according to packaging (usually put in refrigerator overnight or run under cold water until completely thawed).
2)  Preheat oven to 425F.
3) Spray a 13-in x 9-in glass baking dish (a shallow pan will work as well) with non-stick cooking spray (I use olive oil spray).
4) Sprinkle desired amount of Mediterranean seasoning on fish fillets.
5) Bake for 10-12 minutes or until fish flakes easily with a fork!
Balsamic Salad
1 green container of spinach leaves (about 1 1/4 cup)
1 green container (about 1 1/4 cup) of mixed chopped tomatoes, cucumbers, green peppers, and onions
Combine ingredients and drizzle with 1 Tbsp balsamic vinegar (this is a 21 day fix FREE food : ))!
Enjoy!  If you want or need to add a yellow container (grains) try adding brown rice or quinoa!
