Honey Garlic Salmon Salad
I have been OBSESSED with salmon these days! At least it is good for me! 🙂 Today I made a honey garlic salmon salad- tons of veggies, protein, and deliciousness! Salmon is full of healthy fat, protein, and essential vitamins! Though you do need to focus on quality! Always look for wild caught salmon (not farm raised)!
Ingredients (2 servings):
For Salmon:
2 salmon filets (5-6 oz each)
1 teaspoon garlic, minced
1/2 teaspoon ginger, minced
1.5 Tbsp Honey
2 Tbsp liquid aminos (or low sodium soy sauce)
1/2 tsp Pink Himalayan Sea Salt
For Salad:
2 cups raw spinach
1/4 cup cherry tomatoes, halved
1/4 cup cucumbers, sliced
1/2 cup mixed colored bells peppers and onion, chopped
2 Tbsp avocado chopped
1 tsp olive oil and lemon juice to taste
Directions:
1. Mix liquid aminos, honey, ginger, sea salt, ginger, and garlic together in a small bowl.
2. Pour over salmon and marinate for 10-15 minutes.
3. Preheat oven to 400 F and arrange salmon on a baking sheet lined with foil.
4. Bake for 18-20 minutes.
5. Combine salad ingredients and top with salmon! Enjoy!
