Spicy Shrimp Avocado on Whole Grain Pitas

So I have been wanting to make fish tacos for a while but was never getting around to it and now I’m glad I did!  I made these spicy shrimp pitas and they were AMAZING!  I added in avocado, peppers, mushrooms, onions, and romaine lettuce- you can add whatever vegetables you want though!

First, you have to get the spicy shrimp cooking.  (2 servings) 
For the 21 Day Fix: 1 yellow, 1 red, 1 1/2 green, 1/2 blue
Ingredients For Spicy Shrimp:
1/2 pound of medium shrimp
Sauce Ingredients:
1 Tbsp lemon juice
1/2Tbsp honey
1 tsp dried parsley
1/2 tsp olive oil
1 tsp reduced sodium soy sauce
1 tsp creole seasoning

Directions for Spicy Shrimp:

1) Thaw shrimp (1/2 lb for 2 servings – I used medium shrimp) according to package
2) Preheat oven to 450F
3) Spray a shallow glass baking dish with non-stick olive oil spray (mine was 11×7)
4) Mix all sauce ingredients above together
5) Once thawed add the shrimp to the baking dish and pour sauce over shrimp.  Toss shrimp in sauce to coat
6) Bake for 8 minutes stirring occasionally
Now for the Veggies and Pitas!

Ingredients :
1 cup of red, yellow and green bell peppers chopped
1/4 cup of mushrooms sliced
1/4 cup onions sliced
1/2 an avocado cut into small pieces
1 1/2 cups romaine lettuce
Olive Oil Cooking Spray
4 Whole Grain Mini Pitas
Directions:
1) Spray medium skillet with olive oil spray and heat on medium.
2) Add the mixed bell peppers, mushrooms, and onions and stir.
3) Continue stirring until vegetable are roasted (6-7 minutes).
4) Take the pitas and add the romaine lettuce, cooked veggies, avocado and shrimp!  Two mini pitas is one serving.
This recipe makes two servings.
