Southwest Tofu Bowls
This 30 minute recipe is easy and delicious! Southwest tofu bowls are the perfect meal to please vegetarians, vegans, and meat-eaters, alike. It’s a great mix of protein, healthy carbs, and fiber filled veggies and beans. You may not be a tofu fan (I know I wasn’t at first), but it’s all about what you put on it and mix it with! It really absorbs the flavor of anything on it.
Ingredients (4 servings)
1 block of organic tofu, pressed and cubed
1 cup cooked black beans
1 red pepper, chopped
1 green pepper, chopped
1 small tomato, chopped
2 cloves of garlic, diced
1 cup cooked brown rice
2 Tbsp cilantro
2 tsp chilli lime powder
1 cup marinara/red sauce (watch the sodium and sugar!)
Directions
- Add tofu and chilli lime powder to a bag or enclosed container and shake until tofu is coated.
- Heat a large non-stick pan over medium heat (spray with evoo if needed). Add the garlic and cook for 3 minutes.
- Add the tofu, peppers, cilantro, and tomatoes. Cook for about 10-15 minutes until tofu is golden and peppers are seared.
- Add the black beans brown rice, and marinara sauce and stir until evenly coated. Cook for 2 additional minutes.
- Enjoy!
This recipe makes 4 southwest tofu bowls. Store it in an airtight container and enjoy for dinners for the week! I always get organic tofu to make sure there are NO GMOs in it (which are common if you do not get organic tofu). I also have a similar southwest chicken bowl recipe I will post soon!
