Healthy Cauliflower Fried Rice
I love fried rice as much as the next gal. I can easily get suckered into it when eating hibachi, while a lot of people think ‘hey it’s just rice, veggies, and egg, what’s so bad about it?” It’s really what else they add to it in restaurants and the amount they give you! They add lots of soy sauce, butter, use white rice and give you about 2 cups OR MORE to go with your meal! Plus the amount of sodium is outrageous. Of course- enjoy occasionally if this is something you love, but just be mindful of the portion size!
A serving of rice is 1/2 cup, so if you eat all that rice at your meal you are getting 4 servings (and the rice is supposed to be your side). When you eat rice you want to aim for that 1/2 cup cooked serving and brown or wild rice. This is why I’m a big fan of cauliflower rice because you can eat more and I can’t even tell the difference when it’s spiced up this way. (I also gave it to my husband and he had no idea it was cauliflower rice!)
So here is a healthified cauliflower fried rice recipe you can make right in your own home!
This is for 5 servings, each serving is 1 cup:
Ingredients
2 egg whites
1 egg
1/2 small onion chopped
2 cloves garlic
2 tsp Oregano
3 Tbsp low sodium soy sauce,
1 bag of cauliflower rice (or one head made into rice- it makes about 5 cups cooked)!
Directions
1. Cook egg/egg whites until the set and set aside.
2. Cook onion and garlic for 3-4 minutes (medium heat).
3. Add cauliflower rice and soy sauce.
4. Cook on medium-high heat for 5-6 minutes.
5. Sprinkle with oregano, add the egg and there you go!!
