Greek Chicken Pitas

Ever since we went on our honeymoon to Greece, we have become obsessed with Greek-style food and especially cucumber sauce (aka tzatziki sauce). Gyros were a go-to there, and everything was freshly made/baked that it’s hard not to love. So next up, is greek chicken pitas!

I made my own tzatziki sauce from Greek yogurt for some added protein and to eliminate sour cream that typically gets added in pre-made versions. Though, I’ve seen pretty clean tzatziki yogurt sauces at Aldi’s and Trader Joe’s that I’ve used before and they are delicious. Just be sure to check the ingredients so you know what you are getting.

Ingredients (4 servings)

  • 1.5 lbs thin sliced chicken breast
  • 4 cups romaine lettuce
  • 2 small Roma tomatoes, chopped
  • 1/2 red onion, chopped
  • 1 red bell pepper, sliced
  • 1/2 cucumber, sliced thinly and in half
  • 4 whole-grain pitas
  • Trader Joe’s 21 seasoning salute (or another salt-free seasoning)
  • Extra Virgin Olive Oil Spray

If making own tzatziki sauce (want to prep this a few hours before for best results):

  • 2 cups low or nonfat Greek Yogurt
  • 1.5 Tbsp extra virgin olive oil
  • 1 seedless cucumber, diced
  • 3 Tbsp Fresh Dill
  • Sea Salt (to taste)
  • 2 cloves garlic, diced
  • 1 lemon

Directions

  1. You can either bake (how-to here), grill, pan-fry, or air fry the chicken. I tossed it in the air fryer. To do this, preheat air fryer to 380F. Spray with extra virgin olive oil spray. Layer the chicken in a single layer, sprinkle with the 21 Seasoning Salute, cook for 5 minutes. Flip chicken, sprinkle with seasoning and cook for another 5 minutes.
  2. While the chicken is cooking, chop the tomatoes, onions, cucumber, and slice the red bell pepper.
  3. In a small frying pan, toss the red peppers with EVOO spray, roast until slightly blackened (about 4-6 minutes).
  4. Cut 1 pita in half and open each half.
  5. Split evenly between the two halves: 1 cup romaine, 1/4 cup onion, 1/4 cup tomato, 1/4 cup, cucumber, 1/4 of the pepper.
  6. Once the chicken is cooked, cut into bite sized pieces.
  7. Split about 6oz (3/4 cup) chicken between the two halves.
  8. Top each half with 1 Tbsp tzatziki sauce (recipe below if making own!)
  9. Enjoy these Greek chicken pitas!!

Directions for tzatziki yogurt

  1. Dice cucumber – it should make about 1.5 cups. Squeeze as much water as you can from the cucumbers by wrapping in paper towels.
  2. In a medium mixing bowl, add the 2 cups of greek yogurt.
  3. Mix in the cucumbers and salt to taste (about 1-2 tsp).
  4. Add in the garlic, dill, and olive oil. Mix well.
  5. Squeeze the juice from 1 lemon. Add more salt as needed to taste.

The longer you let it sit in the fridge, the thicker the tzatziki will get!
