Blueberry Almond Overnight Oats
Overnight oats are great for a healthy morning breakfast or to grab and go as a snack. One of my favorites is these peanut butter chocolate overnight oats. But I thought I’d try something new this week! This one calls for blueberries, chia seeds, Greek yogurt, almonds, and some honey. I call these blueberry almond overnight oats. I like using frozen blueberries because the juice drips into the Greek yogurt and sweetens it up.
The oats provide fiber and whole grain, the greek yogurt provides protein, the chia seeds provide fiber, protein and healthy fat, blueberries (are delicious!) and provide antioxidants and several vitamins, and almonds are a rich source of vitamin E, calcium, phosphorous, iron. magnesium and more!
I like making it in batches, 3-5 days worth at a time. It really makes life easier. The recipe below is for 1 serving. I love having mason jars, as you can make the overnight oats right in the container, seal it with a lid, and it also doubles as a to-go container. Just don’t forget the spoon!
Ingredients
1/3 cup old fashioned oats
1/2 Tbsp Chia Seeds
1/3 cup Greek Yogurt
1 tsp honey (optional)
1/2 cup frozen blueberries
1 Tbsp sliced Almonds
Directions
- Layer the overnight oats in this order: oats, chia seeds, greek yogurt, honey, blueberries, almonds.
- Place in fridge overnight or for 6 hours.
- Stir it up! Enjoy cold or warm it up!
