Eggplant Pizza
Eggplant Pizza! Have you actually ever had it? I hadn’t (or not knowingly) but I had seen all of the different and delicious recipes that you can make with it so I decided to try one out. This one is eggplant pizza! It might sound strange but it is actually delicious and who doesn’t love pizza?!
You can eat them as is, or put them between some whole grain bread (read here for which I love) and eat it as a sandwich. You can add whatever veggies and cheese you want to these, I like to add more veggies!
Be sure to make sure your eggplant is not full of water. If it is to the touch, sprinkle some Himalayan salt on it and let them sit for about 15-20 min and then dab with a paper towel to remove the moisture.
Ingredients (for 1 serving)
3 slices of eggplant (1/2″thick)
Himalayan Sea Salt
2 Tbsp All natural tomato sauce
2 Tbsp Feta Cheese
1/4 cup Sliced Portobello mini mushrooms
1/4 cup red onion
1/4 cup chopped bell peppers
1/4 cup spinach
Directions:
- Preheat oven to 425F. Spray a cookie tray with nonstick spray and place the eggplant on it.
- Sprinkle eggplant with Himalayan salt and cook for 15-20 minutes.
- Spread tomato sauce on eggplant. Evenly spread with veggies and feta cheese.
- Turn on the broiler and broil for about 5 minutes (watch to make sure it doesn’t burn).
- Enjoy!
