Copycat Chipotle Cilantro Lime Brown Rice, Garlic Shrimp, and Steamed Veggies
I’m seriously in love with the Clean Copycat Chipotle Cilantro Lime Brown Rice! It tastes EXACTLY like Chipotle and contains only lime juice, garlic, sea salt, and cilantro! I whipped it up with garlic shrimp and steamed veggies for the perfect mix of carbs, protein, and veggies for dinner 🙂 Here is the recipe.
Ingredients and Directions (4 Servings)
Clean Chipotle Cilantro Lime Brown Rice
2 cups of uncooked brown rice
Juice of 1 lime
1 tsp minced garlic
1 tsp Pink Himalayan Sea Salt
1/2 cup fresh cilantro, chopped
Directions
1. Cook rice according to packaging
2. Transfer rice to a large bowl and let cool 5-7 minutes
3. Whisk lime, garlic and sea salt together in bowl and stir into rice
4. Fold in the cilantro
Garlic Shrimp
1 pound large shrimp, peeled with tails off
4 cloves of garlic, minced
1/2 tsp oregano
1/2 tsp basil
Juice of 1 lemon
2 Tablespoons Parsley
A couple dashes of black pepper
A couple turns of Pink Himalayan Sea Salt
Directions
1. Preheat oven to 425F
2. Spray a glass baking dish with olive oil non-stick spray
3. Place shrimp in a single layer in the dish
4. Pour the garlic mixture over the shrimp and toss
5. Place in oven and cook for about 8 minutes
Veggies
Steam or bake 4 cups of your favorite veggies. I used broccoli, colored peppers, onions, and mushrooms!
