Black Bean, Quinoa, and Mango Salad
This black bean, quinoa, and mango salad is a vegetarian and vegan-friendly recipe that is filled with nutrients. Not to mention it is a great source of protein from the quinoa and black beans. This is perfect for lunch or to make and take to a cookout and it’ll please everyone! I made it for lunches last week and it was delicious!
All you need is about 20 minutes (and that includes cooking the quinoa) and you are set. I love a meal or side that literally pleases everyone and this is it!
Black Bean, Mango, and Quinoa Salad
This was also so easy to make and stays fresh for about a week! The only cooking required is the quinoa, other than that you are good to go. I always like having some quinoa on hand to use in miscellaneous dishes. It is so versatile!
You could add some avocado in as well, but I would recommend doing that each day so the avocado does not turn brown.
This recipe makes about 4, 1 cup servings. This is if you are eating it as a meal. You can also break it into 1/2 cup servings and get 8 servings out of it. This would be delicious with some grilled chicken or fish!
Ingredients
2 1/4 Cups Cooked Quinoa
1 Can of Black Beans, Rinsed (about 1.5 cups)
1 small Red Pepper, chopped
1/2 Cup Mango Salsa (Mango Salsa is 1 mango chopped, 1/2 large tomato chopped, 1/2 cup cilantro chopped, 1 jalapeno chopped)
1/4 Red Onion, Chopped
Juice from 1 Lime
1 Tbsp Extra Virgin Olive Oil
1/2 tsp Chili Powder
1/4 tsp Pink Himalayan Sea Salt
Directions
- Mix together lime juice, extra virgin olive oil, chili powder, and sea salt.
- In a large bowl, mix together quinoa, black beans, mango salsa, red pepper, and onion.
- Mix the dressing through the salad.
Enjoy! Makes 4 1 cup servings or 8 1/2 cup servings.
