Berry Quinoa Parfait
Quinoa seemed to come out of nowhere as the new super grain and it’s so versatile, it can be used in so many recipes. I’ve had it for breakfast, lunch, dinner, and as a snack! There are so many recipes you can make with it and it’s easy to influence the flavor. It’s packed full of protein and fiber so it’s a great breakfast food, or a snack that is sure to fill you up! This berry quinoa parfait is packed with protein from the quinoa and greek yogurt and also has a sweet side from the fruit and honey! I made this for lunch and it filled me up for 4+ hours! If you want a crunch adding nuts such as almonds, pecans, or walnuts would be delicious with this! For the berries, I used strawberries, raspberries, blueberries, and blackberries. You can use either fresh or frozen! Remember it’s better to buy frozen rather than have your fresh berries travel halfway around the world because freezing actually keeps the nutrients in.
Remember when cooking quinoa- it makes a lot more when cooked than what you measure dry. I forgot about this so now I have an overload of quinoa but that’s not a bad thing! Also make sure to rinse your quinoa first before cooking and to let it cool before making this parfait with it.
Ingredients
1/2 cup cook whole grain quinoa (cook according to packaging
3/4 cup Greek Yogurt (nonfat or 1%)
1/4 cup of each strawberries, raspberries, blueberries, and blackberries
1 tsp honey
1/2 tsp pure vanilla extract
Layer the quinoa, yogurt, fruit, vanilla extract, and honey evenly in a bowl or dish. Stir together and enjoy! Simple and sweet. It doesn’t get much easier than that!
