Beet Mandarin and Feta Salad
I recreated this beet, mandarin, and feta salad from my favorite thing to get at the Double Wide Grill restaurant! I would have never thought to put these things together into a salad and honestly I’m not a fan of beets on their own, but mixed together the flavors are amazing!
I used spinach and kale as the base but you can also use romaine if you aren’t one for the darker green leaves. This salad also has chopped walnuts, tomatoes, and cucumbers! I decided to forgo a protein but a lot of times a add grilled organic tofu or shrimp to this. So feel free to grill up a protein! I just added balsamic vinegar since it’s already so flavorful but a clean cilantro lime dressing would be amazing on this too!
I love the combination of the beets and feta. The juices from the beets and mandarin also mix together quite well which is why this could go without dressing and still be delicious!
Ingredients
1 cup raw spinach
1 cup raw kale
1/4 cup chopped tomatoes
1/4 cup chopped cucumbers
2 small beets, sliced
1 mandarin orange (small)
2 Tbsp feta cheese
1 Tbsp chopped walnuts
Clean Dressing of choice and add a grilled protein if you like!
Directions
- Mix the spinach and kale together on a large plate or dish.
- Top with beets, mandarin, tomatoes, and cucumbers.
- Sprinkle with feta and walnuts.
- Add your desired dressing
