Banana Pancakes

Sunday’s are the perfect day for none other than PANCAKES!  I actually can’t remember the last time I had pancakes because of all the added CRAP that is in those premixed ‘just add water’ pancakes.  I came across a 4 ingredient banana pancake recipe and loved that it didn’t include any flour and just 4 ingredients!  They took about 2 minutes to whip up and then 5 minutes to cook.

For the 21 Day Fix this recipe is 1 purple, 1 yellow, and 1/4 a red. (Without any add-ins)

Ingredients (1 serving- makes 2 large pancakes)
1/2  Banana
1/2 cup old Fashioned Oats
2 Egg Whites
1/2 tsp Pure Vanilla Extract
Plus any add ins you would like – cinnamon, ground flax seed, coconut oil, etc.
Directions
1.  Place all ingredients in a blender and blend until smooth.
2.  In a non-stick skillet pour batter into a circle and cook about 1 minute, then flip and cook another minute.  Repeat until batter is gone.
3.  Put any healthy add-ons on top!  Fruit, pure maple syrup, honey, etc.
