Healthy Chipotle Bowl
Healthy Chipotle Bowl. Enough said, right?! It’s got to be good and it is possibly my new favorite meal. 🙂 You can make any variation, I used shrimp, romaine lettuce, black beans, brown rice, peppers, onions, and pico de galo! What’s better than Chipotle? A healthy Chipotle bowl!
This is super easy to whip up and I made enough to last for few days. (Who wouldn’t want to do that!) I used some of my favorite recipes for the rice and shrimp seasoning. The rice is actually a copy-cat chipotle rice recipe as well.
Each serving is 2 green, 1 yellow, and 1 red for my recipe!
Ingredients (4 servings)
1.5 lb shrimp thawed and peeled
4 cups romaine lettuce
1 cup black beans
1 cup cooked brown rice (I used the cilantro lime recipe.)
4 cups chopped veggies (I use bell peppers and onions).
8 Tbsp Pico De Galo
Directions:
1. Place shrimp and veggies in a large sealable container. Mix the spicy chili seasoning and sprinkle on shrimp/veggies. Seal container and shake.
2. Heat shrimp and veggies in medium saucepan over medium heat for 5-7 minutes.
3. Measure out 1/4 cup black beans, 1/4 cup rice, 3/4 cup shrimp, 1 cup veggies, and 1 cup romaine and combine. Add in 2 Tbsp pico de galo.
