Cinnamon Sweet Potato Breakfast Bowl

I love breakfast!  For every meal.  I have actually been eating this cinnamon sweet potato breakfast bowl as my morning snack.  It seriously reminds me of pumpkin pie.  I was really skeptical but thought, what’s the harm in trying? Now I have been eating it all week and it is warm, comforting, and delicious!

The recipe is really easy to make and includes just 5 ingredients total (including the blueberries!). I have made this with blueberries, raspberries, and strawberries.  I am trying to keep my sugar lower, so these are lower sugar fruits that are still delicious!  Sweet potatoes, well, they are just full of beta-carotene, Vitamin C, potassium, fiber, vitamin B12, and a whole lot more!  They are my favorite healthy starch to eat as they are inflammatory and provide so many nutrients.

Not to mention, the other two ingredients, almond butter, and almond milk!  Natural almond butter is a great healthy fat to help keep you full and fueled and almond milk keeps it Paleo, Whole 30, and Fix Approved!

Cinnamon Sweet Potato Breakfast Bowl

So what is in these delicious breakfast bowls and how do you make them?  Well, it only takes 5 minutes!

Ingredients

1 medium sweet potato, cooked
2 tsp natural almond butter
2 Tbsp Unsweetened Almond Milk
Cinnamon or Pumpkin Pie Spice (to taste)
1 cup for fruit (blueberries, strawberries, raspberries)

Directions

  1. If sweet potato is not already cooked, bake on 400F for about 45 minutes.
  2. Once the sweet potato is cooked, scoop it out of the skin (or leave the skin on for a great source of fiber, I did!) and place in a blender or food processor.
  3. Add the almond butter and almond milk
  4. Blend until smooth
  5. Place in a bowl and top with fruit and cinnamon.

Enjoy!  It literally tastes like pumpkin pie! 🙂
