Garlic Parmesean Cauliflower Mashed Potatoes
Mashed potatoes are a favorite, especially as the weather gets colder and we want warm, comfort food. Yet, most of us each much more than 1 serving of mashed potatoes! I swapped the potatoes for cauliflower and added garlic, parmesan, some extra virgin olive oil, and they are amazing!! This is a great healthy option to have this winter and for Thanksgiving! Plus, it sneak in veggies and those picky eaters won’t even know it.
Literally, these are creamy, look like mashed potatoes and you can’t even tell the difference!! Try swapping these for mashed potatoes and see who notices.
Ingredients
1 medium head of cauliflower (chopped in florets)
2 cloves garlic
1 Tbsp extra virgin olive oil
1/4 cup parmesan cheese
1 tsp garlic powder
1/2 tsp Himalayan sea salt
Chives (for garnish)
Directions
- Bring a large pot of water to a boil, add cauliflower and cook for 10-15 minutes until tender.
- In a saucepan, heat olive oil. Chop garlic and cook 2-3 minutes.
- Add the cauliflower, garlic and oil, parmesan cheese, garlic powder, and salt to a food processor.
- Blend it up!
- Put into a bowl and garnish with chives
*Keeps about 3 days in the fridge.
