Chili Lime Cod
Meatless Monday?! Ok, so I eat ‘meatless’ every day. It had been forever since I had cod and found some fresh wild-caught cod at the grocery store so I just had to buy it! I tried out a new seasoning on it and I really like it! I think I will coat both sides of the fish in it next time to really kick up the flavor!
Most of the time I pair a lean protein with a veggie and complex carb for dinner to keep me full. I paired the chili lime cod with steamed broccoli and garlic brown rice.
What you need (4 servings):
About 1 lb of Cod (4 filets)
1 tsp chilli powder
1/2 tsp dried oregano
1/2 tsp Himalayan sea salt
1/2 tsp cumin
1 tsp extra virgin olive oil
Juice of 1 lime
Directions:
- Preheat oven to 450F.
- Place cod fillets on a nonstick baking dish (or spray with nonstick spray)
- Combine chili powder, oregano, and salt and sprinkle on cod.
- Bake for 5-7 minutes.
- Mix the extra virgin olive oil, cumin, and lime juice.
- Drizzle the EVOO, lime juice, and cumin mixture on cod and bake for another minute.
