Instructions
Preheat oven to 375.
Spray muffin tin (6 muffins) with evoo non-stick spray.
Place eggs and egg whites in a large bowl and whisk.
Add spinach, and red pepper to the muffin tins.
Pour egg mixture evenly over 6 cups.
Bake for 20 minutes.
