Crispy Air Fryer Tofu Bowl

- 2 cups cooked brown rice according to packaging
- 1/4 cup cilantro chopped
- 1 lime
- 4 cloves garlic, diced
- 1.5 cups black beans rinsed
- 2 red bell peppers sliced
- 1 red onion chopped
- 1 block tofu, cubed and pressed
- 4 cups romaine lettuce
- 1/4 cup pico de galo
- 1 tsp paprika
- 1 tsp garlic powder
- salt to taste
Preheat air fryer to 375F for about 5 minutes.
Combine cubed tofu, with paprika and garlic powder in sealed container, shake to coat. Add tofu to air fryer and cook for about 10-13 minutes, shaking tofu occassionally to evenly cook all sides.
Spray medium frying pan with EVOO, add peppers and onion. Cook over medium heat for about 5-7 minutes until peppers and onion are browned.
Once the rice has cooked. Add diced garlic, lime juice, cilantro, and salt to taste. Stir to evenly mix.
Add one cup of romaine lettuce to a bowl, top with 1/2 cup brown rice, 1/3 cup black beans, 1/4 of the tofu and fajitas. Add about 2 Tbsp pico de galo and green goddess dressing as desired- enjoy!
