Pablo Parmesan Chicken

- 1 pound thin sliced chicken breast increase cook time for thicker chicken
- 1/2 cup bread crumbs
- 1 egg
- 1/4 cup parmesan cheese
- 1/2 tbsp chopped garlic
- 2 tbsp green onions, chopped
- 1/4 cup mozzarella cheese
Preheat oven to 425F. Line a baking sheet with aluminum foil and spray with extra virgin olive oil.
In a medium bowl, mix egg and garlic together.
In a second bowl, mix together breadcrumbs and parmesan cheese.
Dip the chicken in the egg mixture and then the breadcrumb mixture, coat on both sides.
Place chicken on baking sheet. Sprinkle with mozzarella cheese.
Bake in oven for about 18 minutes until cooked through.
Let it sit for 1-2 minutes the sprinkle with green onion.
