Pablo Parmesan Chicken

Ingredients

  • 1 pound thin sliced chicken breast increase cook time for thicker chicken
  • 1/2 cup bread crumbs
  • 1 egg
  • 1/4 cup parmesan cheese
  • 1/2 tbsp chopped garlic
  • 2 tbsp green onions, chopped
  • 1/4 cup mozzarella cheese

Instructions

  • Preheat oven to 425F. Line a baking sheet with aluminum foil and spray with extra virgin olive oil.
  • In a medium bowl, mix egg and garlic together.
  • In a second bowl, mix together breadcrumbs and parmesan cheese.
  • Dip the chicken in the egg mixture and then the breadcrumb mixture, coat on both sides.
  • Place chicken on baking sheet. Sprinkle with mozzarella cheese.
  • Bake in oven for about 18 minutes until cooked through.
  • Let it sit for 1-2 minutes the sprinkle with green onion.
